Easy Chopped Salad


I was inspired by this recipe I found on Pinterest to make a chopped salad for dinner. I wanted something quick and easy to throw together since I went to the gym after work, and this was the perfect meal. It made four good-sized portions, so there is enough for Andrew to take some to work with him for lunch tomorrow. 

If you need a quick and easy weeknight meal, keep this one in mind, I bet you have almost everything in your pantry already. I didn't really measure anything, but I used my best guess below so you can try it at home.


Easy Chopped Salad

Ingredients - 
5 strips of bacon 
1 tbls olive oil
salt
pepper
6 chicken breast tenders
1 lime 
4 cups romaine, chopped
4 cups spinach, chopped
1 cup frozen corn, thawed
1/4 cup chopped black olives
1 cup shelled edamame 
1/2 chopped bell pepper
1 can black beans, drained and rinsed
1 cup cherry tomatoes, chopped
1/2 chopped red onion
1 avocado, chopped
2 tablespoons chopped cilantro
2oz blue cheese crumbles

Dressing - 
1/4 cup olive oil
1/4 red wine vinegar
juice from 1/2 fresh lime
splash of orange juice
salt
pepper


Directions - 

Cook bacon until crisp and set aside. In a large skillet, heat olive oil over medium heat. Season both sides of the chicken tenders with salt, pepper, and lime zest then add to skillet. Next, add the juice of one lime and cover until cooked through, flipping halfway through. 

In a large bowl, add the remaining chopped ingredients. Once the bacon has cooled, chop and add that to the bowl as well. 

Shake dressing ingredients in a jar until combined, and toss the salad. Finally, chop the chicken tenders and add to the top. 

Garnish with more blue cheese crumbles because you can never have too much cheese. 






Enjoy! I had a huge bowl of this for dinner, it was delish! I hope you all like it too!


PS...clearly I have a lot to learn about my new camera! Unfortunately, the lovely summer weather in San Francisco means there is zero natural light in our house by the time I get home from work. But it's definitely a step up from iPhone pictures!
